Angel Hair with Walnut Sauce
This is a delicious and elegant pasta side dish.
Ingredients:
8 ounces angel hair pasta
1 to 2 tablespoons water
2 cloves minced garlic
3/4 chopped walnuts
1/2 tablespoon chopped fresh chives
1/2 tablespoon lemon juice
4 ounces vegan cream cheese (you can substitute tofu)

Directions:
- Bring water to boil in a large pasta pot and cook pasta according to box directions.
- Heat a medium-sized skillet over medium heat.
- Cook garlic in 1 to 2 tablespoons water until tender.
- Stir walnuts into garlic, cook for about 3 minutes. Remove the pan from the heat. Set aside.
- When pasta is done, drain it, place it in a warm bowl and set it aside.
- Stir the chives, lemon juice, and vegan cream cheese into the walnuts.
- Heat the walnut mixture in the pan over medium heat until warm.
- Mix the walnut sauce with the pasta.
- If the sauce is too thick, add a small amount of plant milk to thin.
