Apple Cinnamon Muffins (makes 12)

A delicious, healthy and easy to make muffin. You can store leftover muffins in a freezer bag in the
freezer. Just defrost before eating.

Ingredients:
1 tablespoon flax meal + 3 tablespoons water (mix and let sit for 5 minutes)
2 cups whole wheat flour
1/2 cup oats
1/4 cup turbaned sugar (if substituting liquid sweetener add to the wet ingredients)
1/4 cup wheat germ
2 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1/2 cup unsweetened applesauce
2 cups plant based milk
1 teaspoon vanilla

- Preheat oven to 350°.
- Coat muffin tins with oil or use silicone pans.
- In large bowl, mix all dry ingredients (except flax seed)
- Make a well in the flour mixture, add flax meal mixture, apple sauce, milk and vanilla. Stir until well combined.
- Scoop 1/4 cup of mixture into prepared muffin tins.
- Bake in preheated oven for 45-50 minutes, or until toothpick inserted in center of muffin comes out clean.
