Artichoke, Feta & Olive Panini
This sandwich filling is loaded with flavor. It is high in sodium so you may want to watch what you serve with it, a nice fruit salad would be perfect.
8 slices sourdough bread
2-3 teaspoons olive oil 14-ounce jar marinated artichokes, chopped and drained 1/2 cup garlic flavored Feta cheese 1/4 cup sliced olives |
- In a small bowl, combine the chopped artichokes, feta cheese and olives.
- Lightly brush oil on outer side of each bread slice.
- Spoon artichoke mixture on top of 4 bread slices. Top with remaining slices of bread.
- Cook sandwiches in Panini maker or cook on stovetop in a large skillet, flipping over halfway through.
- Cook until bread is golden and filling is warm.
