Artichoke Stuffed Sweet Peppers
These Sweet Peppers are colorful and bursting with flavor. Make extra and use them as a filling for sandwiches the next day.
4 sweet peppers (any color)
14-ounce jar artichokes (in water) or 1 cup frozen artichokes, thawed 1/2 cup garlic flavored Feta cheese 1/2 cup sliced olives 1-2 teaspoons olive oil |
- Cut the top (including the stem) off the sweet peppers.
- Scoop out the seeds and membranes, discard.
- Thoroughly drain and squeeze water from the artichokes.
- In a small bowl, combine the chopped artichokes, feta cheese and olives.
- Lightly rub oil inside and outside of the sweet peppers.
- Spoon artichoke mixture into sweet peppers.
- Place stuffed peppers in baking dish, bake in a 400 degree oven for 30-35 minutes.
