Asparagus with No Guilt Hollandaise
Eating asparagus this way is usually loaded with fat and calories, but steaming this delicate vegetable and serving it with No Guilt Hollandaise sauce lets you enjoy it as often as you want.

1 bunch fresh asparagus
1/4 cup light mayonnaise
1/4 cup non-fat plain Greek style yogurt

1 teaspoon lemon juice
1/2 teaspoon mustard
1/8 teaspoon ground red pepper
  1. In a small saucepan over medium heat combine the mayonnaise, yogurt, lemon juice, mustard and red pepper. Heat until warm, stirring often.
  2. While sauce is cooking, cut or snap ends off asparagus. Heat 1/2-inch of water in a large skillet and place a steaming basket in the water.
  3. When the water begins to simmer place the asparagus in the basket, cover and cook 3-5 minutes depending on the thickness of the stems.
  4. Serve asparagus warm, top with sauce.
