Baked Wild Rice

Baked Wild Rice
An appetizing easy and very nutritious side dish wild rice and barley meld nicely together they both have a nutty flavor. This light rice side dish is a perfect accompaniment with any barbecued, fried or roasted entree.

1-1/4 cup low-sodium chicken broth
1/4 cup wild rice
1/2 cup barley
1 small chopped onion
2-3 cloves chopped garlic
2 tablespoons chopped fresh rosemary
  1. Pre-heat oven to 375 degrees.
  2. Place all ingredients in a 9x9 rimmed baking dish mixing well.
  3. Cover the dish with a cover or foil.
  4. Bake 1 hour or until liquid is absorbed and rice is tender but chewy.
