Banana Nut Muffins
These are wholesome, healthy and fabulous tasting banana nut muffins. You can really taste the bananas because they are not over powered with sugar like most muffins.
Ingredients:
2 cups wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
3 mashed bananas (about 1 cup)
1 cup chopped walnuts (optional)
1/2 cup applesauce
2 T flax meal + 6 T water
3 tablespoons maple syrup
1/3 cup water

Directions:

- Pre-heat oven to 350 degrees. Coat muffin tins or mini-loaf pans with cooking spray.
- Combined flax meal and water in a small bowl. Set aside for 5 minutes.
- In a medium size bowl, stir flax mixture, bananas, water, applesauce and maple syrup until well blended.
- In a large bowl, add flour, baking soda and salt, stir until blended. Add nuts stirring well.
- Fold the banana mixture into the flour mixture, stir until blended.
- Pour batter into prepared pan and bake 30-35 minutes or until done. (mini loaf pans will take a bit longer to cook)
