Banana Nut Muffins
These are wholesome, healthy and fabulous tasting banana nut muffins. You can really taste the bananas because they are not over powered with sugar like most muffins.

                   Original Recipe
1 cup wheat flour                               
1/2 cup melted unsalted butter
1 cup wheat flour                                3/4 cup brown sugar
1 teaspoon baking soda                       2 eggs
1/2 teaspoon salt                                3 mashed bananas (about 1 cup)
3/4 cup chopped walnuts                     1/3 cup warm water

  1. Pre-heat oven to 350 degrees. Coat muffin tins or mini-loaf pans with cooking spray.
  2. Combined butter, sugar and eggs mixing well.
  3. In a medium size bowl, stir bananas and water into the sugar mixture until well blended.
  4. In a large bowl, add both flours, baking soda and salt stir until mixed. Add nuts stirring well.
  5. Combine the banana mixture into the flour mixture, stir until blended.
  6. Pour batter into prepared pan and bake 30-35 minutes or until done. (mini loaf pans will take a bit longer to cook)

              Plant Based Vegan Recipe
2 cups wheat flour                              1/2 cup applesauce
1 teaspoon baking soda                       2 T flax meal + 6 T water
1/2 teaspoon salt                                3 tablespoons maple syrup
3 mashed bananas (about 1 cup)          1/3 cup warm water
3/4 cups chopped walnuts


  1. Pre-heat oven to 350 degrees. Coat muffin tins or mini-loaf pans with cooking spray.
  2. Combined flax meal and water. Set aside for 5 minutes.
  3. In a medium size bowl, stir bananas, water, applesauce and maple syrup until well blended.
  4. In a large bowl, add flour, baking soda and salt into large bowl, stir until blended. Add nuts stirring well.
  5. Combine the banana mixture into the flour mixture, stir until blended.
  6. Pour batter into prepared pan and bake 30-35 minutes or until done. (mini loaf pans will take a bit longer to cook)
