Barbecue Jackfruit Sandwich

Barbecue Jackfruit Sandwich
Savory slow cooked jackfruit with onions and Becky's BBQ sauce. You can use the leftovers for soft tacos or burritos. The leftovers also freeze well.
Ingredients:
2 - 20 ounce cans green jackfruit
1-1/2 cups Becky's BBQ Sauce (or your favorite bbq sauce); divided
1 thinly sliced onion
6 sandwich or hamburger rolls, warmed or toasted

Directions:
- Rinse jackfruit and make remove any seeds.
- Place the jackfruit and 1-1/4 cups Becky's BBQ Sauce in a slow cooker, cover, and cook on low for 8 hours.
- Remove from slow cooker, place on a plate, and shred the jackfruit into pieces using two forks.
- Heat non-stick skillet over medium heat. Cook the thinly sliced onion in 1 tablespoon broth or water until tender and golden in color, stir frequently.
- Layer about 1/4 cup jackfruit on bottom of sandwich roll, then arrange onion on top of jackfruit.
- Place 1 tablespoon barbecue sauce on top of the onion and top with remaining half of sandwich roll.
- You can freeze any remaining jackfruit for another meal.
