Basil, Tomato & Garlic Shrimp
This shrimp recipe exudes summer. It's easy, quick and uses lots of fresh warm weather ingredients.
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes 5-6 cloves garlic cut into slivers 1 pound shrimp |
3-4 large fresh tomatoes cut into wedges
1 tablespoon fresh lemon juice 1 cup fresh basil leaves 1 cup couscous 1-1/2 cups water |
- In a large non-stick skillet, heat olive oil over low heat. Saute the red pepper flakes and garlic for about 5 minutes.
- Increase the heat to medium-high, add shrimp and tomatoes, cooking for about 2 minutes, or until shrimp are done. (They should be pink.)
- Stir in the lemon juice and basil, remove pan from heat and set aside.
- Pour couscous and water into a microwave safe bowl and microwave on high for 3 minutes 30 seconds.
- Stir the shrimp well, fluff couscous with a fork, place the couscous into a serving bowl and arrange shrimp mixture on top.
