Black Bean Soup

Black Bean Soup
This Black Bean Soup is like a vegetarian chili. It is a fantastically flavored soup without being overly spicy. 

​*This recipe is naturally plant based vegan.

1 cup chopped onion
1 cup chopped green bell pepper
4 cloves chopped garlic
2 cans black beans, rinsed and drained
​2 cans no-sodium diced tomatoes
1/2 cup sherry
1 tablespoon Worcestershire sauce (use a vegan sauce if desired)
1 teaspoon red pepper flakes
1/2 teaspoon ground cumin
  1. Heat a medium size saucepan over medium high heat. 
  2. Add 1 tablespoon water and cook onion and bell pepper about 3 minutes.
  3. Add garlic, saute 1 minute.
  4. Add the beans, tomatoes, sherry, Worcestershire sauce, red pepper, and cumin.
  5. Bring to a boil, cover, reduce heat and simmer for 30 minutes.
