Black Bean Soup
This Black Bean Soup is like a vegetarian chili. It is a fantastically flavored soup without being overly spicy.

Ingredients:
1 cup chopped onion
1 cup chopped green bell pepper
4 cloves chopped garlic
2 cans black beans, rinsed and drained
2 cans no-sodium diced tomatoes
1/2 cup sherry
1 tablespoon vegan Worcestershire sauce
1 teaspoon red pepper flakes
1/2 teaspoon ground cumin
1 cup chopped onion

1/2 cup sherry
1 tablespoon vegan Worcestershire sauce
1 teaspoon red pepper flakes
1/2 teaspoon ground cumin
Directions:
- Heat a medium size saucepan over medium high heat.
- Add 1 tablespoon water and cook onion and bell pepper about 3 minutes.
- Add garlic, saute 1 minute.
- Add the beans, tomatoes, sherry, Worcestershire sauce, red pepper, and cumin.
- Bring to a boil, cover, reduce heat and simmer for 30 minutes.
- You can substitute dry beans using one of the methods here.
