Black Beans and Rice
Black Beans and Rice are considered a perfect food combination. This recipe is easy, has a great spicy flavor, and is incredibly healthy.
Ingredients:
1/2 small chopped onion
3 cloves chopped garlic
1 teaspoon ground cumin
1/4 teaspoon ground red pepper1 cup rice, rinsed and drained
1-3/4 cup low-sodium vegetable broth
1 can (15 oz) low-sodium black beans, rinsed and drained
1 can (4 oz) green chilies

1 can (15 oz) low-sodium black beans, rinsed and drained
1 can (4 oz) green chilies
Directions:
- Heat a medium saucepan over medium-high heat.
- When pan is hot add 1 to 2 tablespoons water cook onion and garlic until tender.
- Add cumin, red pepper, and rice stirring well for 1 minute.
- Pour broth into saucepan, bring to a boil.
- Reduce heat to medium-low, cover, and cook 20 minutes, or until rice is cooked.
- Add beans and green chilies, stir well, and serve.
