Black Beans and Rice
Black Beans and Rice are considered a perfect food combination. This recipe is easy, has a great spicy flavor, and is incredibly healthy. 

1 tablespoon olive oil
1/2 small chopped onion
3 cloves chopped garlic
1 teaspoon ground cumin
1/4 teaspoon ground red pepper
1 cup rice, rinsed and drained
1-3/4 cup low-sodium chicken broth
1 can (15 oz) low-sodium black beans, rinsed and drained
1 can (4 oz) green chilies
  1. Heat a medium saucepan over medium-high heat. 
  2. When pan is hot add oil and saute onion and garlic until tender.
  3. Add cumin, red pepper, and rice stirring well for 1 minute.
  4. Pour chicken broth into saucepan, bring to a boil.
  5. Reduce heat to medium-low, cover, and cook 20 minutes, or until rice is cooked.
  6. Add beans and green chilies, stir well, and serve.
