BLG Roasted Chicken (Beer, Lime and Garlic)

BLG Roasted Chicken
This has become my favorite roasted chicken. The flavor of the beer, lime and garlic combination gives it a nice robust flavor. Injecting the chicken with the marinade keeps it nice and moist.
3-4 pound whole chicken
1/2 cup beer, your favorite brand 1 lime, juiced, seeds removed 1/2 teaspoon garlic powder |
- Pre-heat the oven to 350 degrees.
- Remove the chicken giblets, liver, and neck. Rinse and dry the chicken, place the chicken breast side up on a rack in a roasting pan.
- Combine beer, lime juice and garlic powder in small bowl or jar, stir well.
- Using a marinade injector, incest marinade throughout the chicken breasts, thighs and legs.
- Place chicken breast side down in roasting pan. (Do not place a rack in the pan).
- Roast for 45 minutes. Turn chicken over. Roast for an additional 45 minutes. A meat thermometer placed in chicken thigh should read 180 degrees.
- Remove the chicken when done. Cover chicken and let sit 15-20 minutes before carving.
