Breakfast Burritos
This breakfast is delicious and quick. It's great for serving along with fruit or a smoothie. This recipe can easily be made vegan or plant based.

Original Recipe
1/2 cup shredded cooked chicken or turkey (or 4 ounces deli turkey)
4 flour tortillas
4 eggs, slightly beaten
1 cup shredded cheddar cheese

Plant Based Vegan Recipe
12 ounces firm tofu, drained and crumbled
​1/2 cup shredded young jackfruit*(if using canned jackfruit in water, drain and dry before using)
​2 cloves garlic minced
1/4 cup nutritional yeast
1 teaspoon turmeric
4 whole wheat flour tortillas​
  1. Heat skillet over medium heat. Coat pan with cooking spray.
  2. Pour eggs into warm skillet, cook stirring frequently.
  3. Add chicken (or turkey), continue stirring.
  4. When eggs are almost cooked, add the cheese. Stir until the cheese has melted.
  5. While cheese is melting, warm the tortillas over medium heat on a separate skillet. (You may also heat them in a microwave oven.)
  6. Arrange 1/4 of the egg mixture down the middle of each warmed tortilla. Fold one end in and roll up like a burrito.
  1. Heat skillet over medium heat. Add a small amount of water to pan.
  2. Cook garlic 3-4 minutes, until tender
  3. Add shredded jackfruit, continue stirring.
  4. Stir remaining ingredients into mixture. Heat through. 
  5. Warm the tortillas over medium heat on a separate skillet. (You may also heat them in a microwave oven.)
  6. Arrange 1/4 of the mixture down the middle of each warmed tortilla. Fold one end in and roll up like a burrito.
