Broccoli Soup
Try this healthy, Broccoli Soup recipe. The garlic and onion add just the right balance to this delicious and creamy broccoli soup.

1 tablespoon chopped garlic
1/2 cup chopped onion 2 cups peeled, diced potato 4 cups chopped broccoli florets |
4 cups reduced sodium vegetable broth
1 tablespoon fresh thyme dash red pepper sauce (optional) |
- Heat a large saucepan over medium heat.
- Add 1 tablespoon broth, garlic and onions cooking until tender.
- Add potato, broccoli, broth and thyme. Bring to a boil. Reduce heat and simmer uncovered for 20 minutes.
- Using an immersion blender, blend until smooth. (If using a standard blender you will have to blend the soup in batches. Take care when blending hot liquids.)
- Season with red pepper sauce if desired.
