Broiled Lime Shrimp
This quick, easy flavorful broiled shrimp is enlivened with lime and garlic. It is easily adapted for grilling.
1 pound shrimp, peeled and deveined
2 limes 3 cloves minced garlic |
1 tablespoon olive oil
1/4 teaspoon red pepper flakes 8 bamboo skewers |
- Rinse and dry shrimp then place them in a medium glass bowl.
- Grate both lime peels and place the lime zest in a small bowl.
- Cut the limes into wedges and squeeze the lime juice into the bowl with the lime zest.
- Add the garlic, olive oil and the red pepper flakes, to the lime juice and mix well.
- Pour the marinade over the shrimp, cover, and refrigerate for at least 2 hours.
- Soak bamboo skewers in water while the shrimp marinate.
- Equally thread the marinated shrimp on bamboo skewers and brush some of the marinade on the shrimp.
- Broil for 3-4 minutes, turn over, brush with more marinade, and broil 1-2 minutes. (You can also grill these shrimp.) Serve warm.
