Cabbage Soup
Cabbage soup is very satisfying and hearty making it an excellent soup on a cold winter night.

Ingredients:
3-4 cloves chopped garlic
1/2 cup chopped onion
1/2 cup sliced carrots
1 cup sliced celery
4 cups low sodium vegetable broth
3 cups chopped green cabbage
3 medium diced tomatoes

Directions:
- Heat large saucepan over medium heat.
- Add 1 tablespoon broth, stir in onion and garlic. Cook until onion is soft.
- Add carrots, celery, and remaing broth, bring to a boil. Simmer 10 minutes.
- Stir in cabbage simmering until cabbage wilts.
- Add tomatoes, stir mixture. Return to a boil and simmer uncovered for 20 minutes.
