Carrot Salad
Carrots and apples have a wonderful fresh, balanced flavor. This salad reminds me of the fresh squeezed juice we love to drink.
Ingredients:
1 cup grated carrots
1/2 cup apple, peeled, cored, and grated
1/4 cup dried cranberries
teaspoon lemon juice
1/2 tablespoon honey
2 tablespoons slivered almonds (optional)
