Cauliflower with Avocado
The textures and flavors blend beautifully together in this impressive looking vegetable side dish.
1 medium head cauliflower, whole
2 ripe medium avocados, mashed 1/2 to 1 tablespoon lime juice salt to taste |
- Trim cauliflower leaves from cauliflower and slice the stem so the head sits flat.
- Pour 1-inch water in bottom of saucepan.
- Place steaming basket over water. Heat to boiling.
- Place the whole cauliflower in steaming basket and cover with tight fitting top.
- Cook until cauliflower is tender but not mushy, about 20 minutes.
- Refrigerate until cool.
- Just before serving mix the avocado, lime and salt (if using) together and spread on top of cooled cauliflower head.
- Cut into wedges.
