Chanterelle and Tofu Scramble
Fresh Chanterelle mushrooms are a treat. They are expensive to buy so if you live in an area where you can pick them fresh you are in luck. They have a beautiful orange color and a distinctive flavor. You can always use crimini mushrooms instead.
Directions:
1 tablespoon chopped fresh sage
1/2 cup chopped onion
1 clove chopped garlic
1/2 cup sliced chanterelle mushrooms
14 ounces firm tofu, drained
salt and pepper to taste

Directions:
- Heat 1-2 tablespoon water in a large skillet.
- Stir sage, onion, garlic and chanterelles into skillet, sautéing until tender.
- Crumble tofu into medium bowl.
- Add tofu to skillet stir and cook until done.
