Chateaubriand

Here is another great recipe from my brother Greg. Chateaubriand steak is a particular thick cut from the tenderloin. Greg usually serves this with a peppercorn sauce. 

1 to 1-1/2 pounds chateaubriand
  1. On the grill, sear meat on both sides over medium–high heat. 
  2. Add mesquite smoke chips, cover, and cook indirectly. 
  3. Turn the meat over and add chips a second time. 
  4. Finish cooking the steak with the grill covered. (Cooking time should be about 45 minutes for medium-rare and 1 hr for well done. Use a temperature gauge to decide when to remove the steak.)
