Here is another great recipe from my brother Greg. Chateaubriand steak is a particular thick cut from the tenderloin. Greg usually serves this with a peppercorn sauce.
1 to 1-1/2 pounds chateaubriand
- On the grill, sear meat on both sides over medium–high heat.
- Add mesquite smoke chips, cover, and cook indirectly.
- Turn the meat over and add chips a second time.
- Finish cooking the steak with the grill covered. (Cooking time should be about 45 minutes for medium-rare and 1 hr for well done. Use a temperature gauge to decide when to remove the steak.)
