Chicken and Mashed Potato Pie
Here is a nice way to serve chicken and mashed potatoes all in one dish. This recipe can be prepared ahead of time and cooked when your ready to eat.
1/4 pound snow peas
2 cups cooked chicken, cut into bite sized pieced 1/2 cup sliced water chestnuts 3 tablespoons sliced green onions 1/3 cup non-fat plain Greek style yogurt 1/4 cup light mayonnaise |
1 teaspoon curry powder
1 teaspoon lime juice 1/4 teaspoon ground ginger 2 cups prepared mashed potatoes 1 cup shredded cheddar cheese |
- Cook snow peas in 2 quarts boiling water for 1-2 minutes. Remove from heat and plunge peas into clod water.
- Pre-heat oven to 350 degrees. Coat a 9-inch pie plate with cooking spray.
- In a large bowl, combine plain yogurt, mayonnaise, curry powder, lime juice and ginger, mix well.
- Stir in chicken, snow peas, water chestnuts and green onions.
- Spoon prepared mashed potatoes into bottom of pie plate, arrange chicken mixture over potatoes, top with shredded cheese.
- Bake uncovered for 30 minutes, or until warm.
