Chicken in Blackberry Sauce
Chicken with just the right balance between the sweetness from the blackberries and the savoriness of the soy sauce and mustard. chicken thighs can be substituted for the chicken breasts.
4 chicken breasts, rinsed, dried, and skinned
1 cup spreadable blackberry fruit (no sugar added) 2 tablespoons apple cider vinegar |
1 teaspoon low sodium soy sauce
1/2 teaspoon Dijon mustard 1/8 teaspoon ground ginger |
- Pre-heat oven to 350 degrees. Coat baking dish with cooking spray.
- Place chicken in prepared baking dish.
- In a small bowl mix the blackberry fruit spread, vinegar, soy sauce, mustard, and ginger.
- Pour 1/2 of the sauce over chicken, and cover.
- Bake 40 minutes, or until chicken is done.
- Warm reserved sauce, serve with chicken.
