Chicken Salad Sandwich
Beautifully seasoned light chicken salad perfect served as a sandwich or on a bed of lettuce. This is a wonderful way to use your leftover whole roasted chicken.
2 cups cubed cooked chicken
1/4 cup sliced celery 1/4 cup non-fat plain Greek Yogurt 1/3 cup light mayonnaise 1/2 tablespoon white wine vinegar |
1/4 teaspoon ground mild curry
4 whole wheat sandwich rolls lettuce leaves |
- Mix all ingredients in a small bowl, cover and refrigerate up to 24 hours.
- Arrange lettuce leaves on bottom of sandwich roll.
- Spread 1/4 of chicken mixture on top of lettuce and place the other half of sandwich roll on top of chicken.
