Chicken with Sauteed Mushrooms
Simple, quick and elegant are perfect words to describe this easy chicken entree.
1 pound boneless, skinless chicken breast
1 tablespoon olive oil (divided) 1 tablespoon garlic, finely minced (divided) |
1/4 pound sliced mushrooms
2 tablespoons Marsala 1 tablespoon lemon juice |
- Using a mallet, pound chicken between two sheets of wax paper until 1/4 inch thick.
- In a large skillet, heat 1/2 tablespoon olive oil over medium heat.
- Saute 1/2 tablespoon garlic about 1 minute, do not brown.
- Add chicken to skillet, cook about 3 minutes per side. Chicken should be lightly browned and cooked through. (Set aside and keep warm.)
- Add the other 1/2 tablespoon olive oil to pan. Saute 1/2 tablespoon garlic and all the mushrooms, about 3-4 minutes.
- Pour Marsala and lemon juice over mushrooms. Cook stirring until liquid is absorbed.
- Serve mushrooms over chicken breast.
