Cilantro Lime Quinoa
Wonderful fresh tasting quinoa recipe, this makes a fabulous accompaniment to fish, seafood and poultry.
Ingredients:
1/4 cup chopped onion
1 clove chopped garlic
1 cup quinoa
2 cups low-sodium vegetable broth
1/2 tablespoon lime juice
1 tablespoon chopped fresh cilantro
1/4 cup chopped onion

1 tablespoon chopped fresh cilantro
Directions:
- Heat medium saucepan over medium heat.
- Add 1-2 tablespoons water, sauté onion and garlic until tender.
- Add quinoa, stirring well to coat. Cook 2-3 minutes until toasted.
- Add broth, bring to a boil. Simmer uncovered for 15-20 minutes, or until all liquid is absorbed.
- Stir lime juice and cilantro into quinoa mixing well.
