Cod with Tomatoes
Wonderful, flavorful and low calorie fish recipe. This is an easy entree for a week day meal.
1 pound cod
1 large tomato, sliced (or 2 small tomatoes) salt and pepper to taste 1/4 cup shredded Parmesan cheese |
- Pre-heat oven to 350° and coat a baking dish with oil.
- Arrange fish on prepared dish.
- Salt and pepped fish to taste, place tomato slices on top of fish.
- Bake fish uncovered for 25 minutes, or until done.
