Cod with Tomatoes serves 4

Cod with Tomatoes
Wonderful, flavorful and low calorie fish recipe. This is an easy entree for a week day meal.

1 pound cod
1 large tomato, sliced (or 2 small tomatoes)
salt and pepper to taste
1/4 cup shredded Parmesan cheese
  1. Pre-heat oven to 350° and coat a baking dish with oil.
  2. Arrange fish on prepared dish.
  3. Salt and pepped fish to taste, place tomato slices on top of fish.
  4. Bake fish uncovered for 25 minutes, or until done.
