Colcannon
A colorful Irish classic this wonderful tasting and easy to prepare Colcannon recipe is a great alternative to just regular mashed potatoes.
4 medium potatoes, peeled and diced
1 tablespoon butter 4 cloves minced garlic 2 cups chopped cabbage |
3 sliced green onions
1/4 cup grated carrots 1 cup low-sodium chicken broth (divided) 1/4 cup non-fat plain Greek style yogurt |
- Place potatoes in boiling water. Boil 10 minutes, or until soft.
- Meanwhile, heat a large skillet over medium high-heat.
- Melt the butter, add the garlic, and saute until tender.
- Add the cabbage, green onion, and carrots. Stir for 1 minute.
- Add 1/2 cup of chicken broth to cabbage mixture, bring to a boil, cover, reduce heat to low and simmer 10 minutes.
- When potatoes are done place them along with the yogurt in a bowl and mash them.
- Use the remainder of the chicken broth as needed to make smooth mashed potatoes.
- Stir in vegetable mixture.
