Cranberry Mini Loaves

Cranberry Mini Loaves
These make festive breakfast loaves. They are also a wonderful gift giving treat.

1/3 cup butter
1/4 cup applesauce
1-1/2 cup brown sugar
4 eggs
1-1/2 cup flour
1-1/2 cup whole wheat flour
2 teaspoons each baking soda 
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
cranberry sauce  (1 batch homemade or 1 can)
2/3 cup chopped pecans or walnuts
    1. Pre-heat oven to 350 degrees. Coat 16 mini loaf pans with cooking spray.
    2. In a large bowl, beat butter, applesauce and sugar until creamy.
    3. Beat in the eggs, one at a time until well combined.
    4. Stir cranberry sauce into egg mixture.
    5. Gently stir in both flours, baking soda, baking powder, cinnamon and cloves. 
    6. Stir in nuts until well combined.
    7. Spoon batter into loaf pans and bake 25-30 minutes.
    8. Remove from pans, cool on a wire rack.
