Cranberry Mini Loaves
These make festive breakfast loaves. They are also a wonderful gift giving treat.
1/3 cup butter
1/4 cup applesauce 1-1/2 cup brown sugar 4 eggs 1-1/2 cup flour 1-1/2 cup whole wheat flour |
2 teaspoons each baking soda
2 teaspoons baking powder 2 teaspoons ground cinnamon 1/2 teaspoon ground cloves cranberry sauce (1 batch homemade or 1 can) 2/3 cup chopped pecans or walnuts |
- Pre-heat oven to 350 degrees. Coat 16 mini loaf pans with cooking spray.
- In a large bowl, beat butter, applesauce and sugar until creamy.
- Beat in the eggs, one at a time until well combined.
- Stir cranberry sauce into egg mixture.
- Gently stir in both flours, baking soda, baking powder, cinnamon and cloves.
- Stir in nuts until well combined.
- Spoon batter into loaf pans and bake 25-30 minutes.
- Remove from pans, cool on a wire rack.
- Makes 24 muffins
