Delicious Chocolate Muffins (makes 12)
Ingredients:
1 tablespoon flax meal + 3 tablespoons water
1 cup whole wheat flour
1 cup oats
1/2 cup wheat germ
1/2 cup cocoa
1/4 cup raw sugar
1 tablespoon cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
2 cups plant based milk
1/2 cup canned or cooked pumpkin
1 teaspoon vanilla
1 tablespoon flax meal + 3 tablespoons water

Directions:
- Preheat oven to 400°. Grease muffin tin with oil. ( You can also use silicone muffin pans or paper liners.)
- Combine the flax meal and water in a small bowl and set aside for 5 minutes.
- In a large bowl, combine flour, oats wheat germ, cocoa, sugar, cinnamon, baking powder, baking soda. Mix well.
- Add the flax meal, pumpkin, vanilla and plant based milk to the four mixture, stirring just until well combined.
- Fill prepared muffin tin. Bake for 45-50minutes or until a toothpick inserted in middle of muffin comes out clean.
