Easy Rice Pilaf serves 4

Easy Rice Pilaf
Here is a simple rice dish to enhance any meal.
Note: You can omit the wine and just use 2 cups of broth.

Ingredients:
1/2 cup orzo
1/2 cup rice (I like to use jasmine but any long grain rice will work)
1-2 cloves garlic. minced
1 small onion, peeled and dice
1/4 cup white wine
1-3/4 cups low sodium vegetable broth
2 tablespoons chopped fresh herbs (any combination of your favorite kind)
1/2 cup orzo
1/2 cup rice (I like to use jasmine but any long grain rice will work)

1/4 cup white wine
1-3/4 cups low sodium vegetable broth
2 tablespoons chopped fresh herbs (any combination of your favorite kind)
Directions:
- Heat a medium saucepan over medium heat.
- Add 1 to 2 tablespoons water, cook garlic and onion until tender.
- Stir in rice and orzo coating well. Cook 3-4 minutes, stirring well until rice/orzo are slightly golden in color.
- Slowly add wine and broth to rice mixture. Add salt to taste.
- Bring to a boil, reduce heat to low, cover and cook for 20-25 minutes. (Water should be gone and rice should be tender.)
- Add the herbs to the rice and stir with a fork to combine.
- Let sit 5 minutes before serving.
