Eggless Salad Sandwich
Enjoy this vegan take on classic egg salad sandwiches.
Ingredients:
7 ounces firm tofu, drained, presses
2-3 tablespoons vegan plant based mayo
1 tablespoon spicy mustard
2 tablespoons chopped onions
1/2 teaspoon turmeric
1/4 teaspoon paprika (optional)
1/4 teaspoon garlic powder
8 slices wheat bread
lettuce
7 ounces firm tofu, drained, presses
2-3 tablespoons vegan plant based mayo

Directions:
- In a medium size bowl, crumble the tofu between your thumbs and fingers into small pea size pieces.
- Add mayonnaise, mustard, onions, turmeric, paprika and garlic mixing well.
- Place 1/4 of mixture on 4 slices of wheat bread.
- Top mixture with lettuce leaves.
- Place remaining slice of wheat bread on top of each sandwich. Slice in half before serving.
