2 tablespoons each, lemon juice and lime juice
1 tablespoon balsamic vinegar
1/4 cup extra virgin olive oil
1/2 teaspoon sesame oil
2 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground ginger
1/2 teaspoon honey
1/2 cup packed fresh cilantro leaves, chopped
1/4 teaspoon salt (or to taste)
1 head iceberg lettuce, washed, spun dries and chopped
2 tomatoes, chopped
1-1/2 cups corn, thawed if frozen
1/2 cucumber, peeled and sliced
1/4 cup sliced green onions
1/4 cup finely shredded lettuce
1/4 cup chopped cilantro
- Place all dressing ingredients in food processor and mix well. (You can use a blender or place all ingredients in a jar, close tightly and shake well.
- In a large bowl combine all salad ingredients, mixing well.
- Toss salad with dressing just before serving.
