1 pound beef cut into 3/4- inch cubes
1 tablespoon flour
1/2 tablespoon olive oil
1 clove chopped garlic
1 cup chopped onions
3/4 cup carrots (sliced 1/4 inch thick)
3/4 cup celery (sliced 1/4 inch thick)
3/4 cup zucchini (sliced 1/4-inch thick)
1 large potato chopped into 1/2-inch cubes
1-1/2 cups low-sodium beef broth
1 cup red wine
1-6 ounce can no-sodium tomato paste
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh rosemary
- In medium size bowl, thoroughly mix beef and flour.
- Add oil, garlic, onions, and beef to bottom of a slow cooker. Mix well.
- Add the rest of the ingredients, stir well, cover, and set slow cooker to high setting.
- Cook for 4 to 4-1/5 hours.
