Focaccia
Try this as an alternative to pizza. You can easily adapt this focaccia recipe to use whatever toppings you have.
Dough
1 package active dry yeast
1-1/2 cups warm water (110 degrees)
2 tablespoons olive oil
3-4 cups all purpose flour

Toppings
2 teaspoons olive oil
2 sliced onions
1 whole peeled and separated garlic bulb
1/2 cup firm tofu, drained and crumbled

Directions:
- Pour warm water into a large bowl, sprinkle the yeast over the water and let sit until foamy. About 5 minutes.
- Using a spoon stir in olive oil. Stir in 2-1/2 cups flour, mix until dough is elastic.
- Add 1-2 cups of flour, stir well until dough no longer sticks to side of bowl.
- Turn dough out onto a lightly floured surface. Knead dough 5-10 minutes.
- Place dough into a lightly oiled bowl. (You can use cooking spray to coat the bowl and spray a little on top of the dough too.)
- Cover the bowl with a clean towel and let rise until doubled. (About 30 to 45 minutes.)
- Punch dough down and briefly knead on a lightly floured surface. Roll dough into a 10x15 rectangle.
- Coat a rimmed 10x15 inch baking dish with cooking spray.
- Place rolled dough onto prepared baking dish, cover and let rise until almost doubled.
- While dough is rising, saute onions and garlic in 2 teaspoons olive oil until well cooked, 8-10 minutes. Set aside.
- Brush the dough with olive oil and place toppings on focaccia.
- Bake in a pre-heated oven at 400 degrees for 35-45 minutes.
