Focaccia

Focaccia
Try this as an alternative to pizza. You can easily adapt this focaccia recipe to use whatever toppings you have.

Dough
1 package active dry yeast
1-1/2 cups warm water (110 degrees)
2 tablespoons olive oil
3-4 cups all purpose flour
Toppings
2 teaspoons olive oil
2 sliced onions
1 whole peeled and separated garlic bulb 
1/2 cup feta cheese
  1. Pour warm water into a large bowl, sprinkle the yeast over the water and let sit until foamy. About 5 minutes.
  2. Using a spoon stir in olive oil. Stir in 2-1/2 cups flour, mix until dough is elastic.
  3. Add 1-2 cups of flour, stir well until dough no longer sticks to side of bowl.
  4. Turn dough out onto a lightly floured surface. Knead dough 5-10 minutes.
  5. Place dough into a lightly oiled bowl. (You can use cooking spray to coat the bowl and spray a little on top of the dough too.) 
  6. Cover the bowl with a clean towel and let rise until doubled. (About 30 to 45 minutes.)
  7. Punch dough down and briefly knead on a lightly floured surface. Roll dough into a 10x15 rectangle.
  8. Coat a rimmed 10x15 inch baking dish with cooking spray. 
  9. Place rolled dough onto prepared baking dish, cover and let rise until almost doubled.
  10. While dough is rising, saute onions and garlic in 2 teaspoons olive oil until well cooked, 8-10 minutes. Set aside.
  11. Brush the dough with olive oil and place toppings on focaccia.
  12. Bake in a pre-heated oven at 400 degrees for 35-45 minutes.
