French Onion Soup
serves 4

        Original Recipe
2 tablespoons butter
2 thinly sliced medium size onions
1 tablespoon chopped fresh thyme
1 bay leaf
4 cups low-sodium beef broth
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
1/2 cup red wine
​4 thick slices french bread
4 -1 ounce slices Swiss cheese

  1. In a large saucepan or soup pot melt butter over medium-low heat. 
  2. Cook onions until soft and caramelized. This will take about 20-25 minutes.
  3. Add the thyme and bay leaf. Cook 1-2 minutes
  4. Pour the broth, wine, vinegar, and Worcestershire sauce into the pot.
  5. Bring to a boil, reduce heat, cover, and simmer for 30 minutes.
  6. Toast the bread. Top each piece of toasted bread with the cheese and place under the broiler until cheese melts.
  7. Ladle soup into 4 bowls and top with one piece of cheese toast.

Plant Based Vegan Recipe
2 thinly sliced medium size onions

1 tablespoon chopped fresh thyme
1 bay leaf
4 cups low-sodium vegetable broth
1 tablespoon vegan Worcestershire sauce
1 tablespoon balsamic vinegar
1/2 cup red wine
4 thick slices french bread

  1. In a large saucepan or soup heat 2 tablespoons of water over medium-low heat. 
  2. Cook onions until soft and caramelized. This will take about 20-25 minutes.
  3. Add the thyme and bay leaf. Cook 1-2 minutes
  4. Pour the broth, wine, vinegar, and Worcestershire sauce into the pot.
  5. Bring to a boil, reduce heat, cover, and simmer for 30 minutes.
  6. Cut the bread into cubes, toast until lightly toasted.
  7. Ladle soup into 4 bowls and top with bread cubes.
