French Onion Soup
serves 4
2 thinly sliced medium size onions
1 tablespoon chopped fresh thyme
1 bay leaf
4 cups low-sodium vegetable broth
1 tablespoon vegan Worcestershire sauce
1 tablespoon balsamic vinegar
1/2 cup red wine
4 thick slices french bread

- In a large saucepan or soup heat 2 tablespoons of water over medium-low heat.
- Cook onions until soft and caramelized. This will take about 20-25 minutes.
- Add the thyme and bay leaf. Cook 1-2 minutes
- Pour the broth, wine, vinegar, and Worcestershire sauce into the pot.
- Bring to a boil, reduce heat, cover, and simmer for 30 minutes.
- Cut the bread into cubes, toast until lightly toasted.
- Ladle soup into 4 bowls and top with bread cubes.
