Halibut and Chanterelles
Delicate fresh halibut fish smothered with earthy chanterelle mushrooms, garlic and onions.
1 pound halibut (cut into 4 portions)
1 tablespoon fresh lemon juice 4 ounces sliced chanterelle mushrooms 1-2 cloves minced garlic |
1/4 cup chopped onions
1 tablespoon chopped fresh parsley 1/4 cup white wine 1/4 cup fresh shredded Parmesan cheese |
- Pre-heat oven to 350 degrees.
- Arrange fish on a baking dish. Squeeze lemon juice over fish.
- Cook fish in pre-heated oven for 15 minutes, or until fish flakes with a fork.
- While fish is in the oven, cook mushrooms, garlic, onions and parsley until tender in a large non-stick skillet over medium heat.
- Remove fish when done, arrange with 1/4 mushroom mixture on top of each piece and sprinkle 1 tablespoon Parmesan cheese on top.
- Broil for 1-2 minutes, until cheese melts.
