Mediterranean Pork Chops
Easy skillet pork chops with a Mediterranean inspired sauce, served over penne pasta.
4 pork chops
1/2 tablespoon olive oil 1 sliced medium onion 3 cloves sliced garlic 1-14.5 ounce can salt free diced tomatoes 1 tablespoon fresh thyme |
1 tablespoon cornstarch + 1 tablespoon water
1 cup sliced mushrooms 1/2 cup sliced black olives 8 ounces cooked penne pasta |
- Heat a large skillet over medium high heat. When the skillet is hot, heat the oil.
- Brown pork chops about 4-5 minutes per side. Remove from pan, set aside.
- Saute the garlic and onion in the pan juices until tender.
- Add the tomatoes, thyme, and add the pork chops back to the skillet.
- Bring to a boil, cover, and reduce heat. Simmer for 40 minutes.
- Mix the cornstarch and water.
- Remove pork when done and keep warm.
- Add the mushrooms, olives, and the cornstarch mix to the sauce, cooking until thickened.
- Serve pork chops with sauce over pasta.
