Mexican Chicken Soup
If you like Mexican food, you will love this soup! This amazing soup has the fabulous flavors of lime, cumin and cilantro. These are the flavors that give Mexican food its fresh taste.

Ingredients:
5-6 cloves chopped garlic
3 chopped green onions
6 cups low-sodium vegetable broth
1 tablespoon fresh oregano
1-1/2 teaspoons ground cumin
1/2 teaspoon chili powder
20 ounces fresh jackfruit, shredded and seeds removed optional (or substitute 20 ounce can jackfruit)
1/2 tablespoon lime juice
3 seeded chopped tomatoes
2 peeled chopped avocados
1/2 cup fresh cilantro

1/2 teaspoon chili powder
20 ounces fresh jackfruit, shredded and seeds removed optional (or substitute 20 ounce can jackfruit)

Directions:
- Heat a large saucepan over medium heat add 1=2 tablespoons of water and garlic, cook garlic about 2 minutes.
- Add green onions and stir about 1 minute.
- Add broth, oregano, cumin, chili powder, and jackfruit.
- Raise heat to medium-high, bring to a boil, reduce heat to medium-low and simmer for 30-40 minutes.
- Add, lime juice, tomatoes, avocado, and cilantro.
- Cover and let simmer for 15 minutes.
