Mushroom Stuffed Chicken

Mushroom Stuffed Chicken
Perfect recipe for when you are looking for something special that looks just as good as it tastes. This can be prepared ahead of time and refrigerated until ready to cook.

2 chicken breasts or 4 thighs, bones and skin removed
1/2 cup Marsala, divided
2 cups mushrooms, sliced
2-3 cloves garlic, minced
4 green onions, sliced
2 tablespoons fresh thyme
  1. Cut breasts in half horizontally. Place 1 piece at a time between plastic wrap and pound to 1/4-inch thick. Keep cold.
  2. Preheat oven to 350 degrees.
  3. Heat saucepan over medium heat. Add 1/4 cup Marsala.
  4. Saute mushrooms and garlic until tender, about 7-8 minutes.
  5. Add green onions and thyme, cooking 2-3 minutes more.
  6. Place 1/4 mushroom mixture down the middle of each chicken piece.
  7. Fold the sides together over the filling. Keep the chicken roll together using toothpicks.  
  8. Arrange chicken bundles in 9x11 baking dish.
  9. Pour remaining Marsala over chicken.
  10. Place chicken in oven, bake for 30-35 minutes, or until chicken is no longer pink.
