Oven Baked Apple Pancakes
serves 4 (2 large pancakes)

Oven Baked Apple Pancakes
If you are looking for something easy, yet special enough to serve for a holiday breakfast or brunch these pancakes will be a sure winner. Make sure you serve them when they are hot or they will begin to collapse.

3 eggs
3/4 cup flour
3/4 cup low fat milk
1 apple, cored and thinly sliced
2 tablespoons sugar
1/8 teaspoon cinnamon
  1. Pre-heat oven to 400 degrees. Generously coat 2 cake or pie pans (including the sides) with cooking spray.
  2. Using a blender, mix the eggs, flour and milk until well blended.
  3. In a mall bow, mix the sugar and cinnamon.
  4. Arrange 1/2 the apple slices in the bottom of each pan.
  5. Pour 1/2 the pancake mixture over the apples in each pan.
  6. Sprinkle 1/2 the cinnamon sugar over batter in each pan.
  7. Bake for 20-25 minutes or until golden and puffed.
  8. Serve immediately with your favorite syrup.
  • My Raspberry Vinaigrette isn't exactly a syrup but it tastes really good with these pancakes.
