Pancetta, Basil and Tomato Sandwich
Serves 4 (or 16 appetizers)

Pancetta, Basil and Tomato Sandwich
Here's my version of a BLT. Wonderful with garden fresh tomatoes and basil. These make a delicious appetizer or quick lunch.

8 slices Italian or French bread (no more than 1/2-inch thick)
2 tablespoons honey mustard (or spicy mustard)
8 large basil leaves
16 thin slices tomato
4 slices pancetta
8 thin slices Havarti cheese (optional)
  1. In a large skillet, cook pancetta until crisp.
  2. Thinly spread mustard on each slice of bread.
  3. Layer cheese, pancetta, basil leaf and top with 2 tomato slices.
  4. Cut each slice in half.
