Peach Coffee Cake

Peach Coffee Cake
A coffee cake that makes a nice breakfast treat, snack or dessert. 

1 egg, slightly beaten
1/2 cup non-fat plain Greek yogurt
1/2 teaspoon vanilla
1/3 cup sugar
1/4 cup unsweetened applesauce
1/2 cup wheat flour
1/2 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
2 cups peeled and sliced peaches
2 tablespoons flour
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1 tablespoon cold butter
1/4 cup chopped almonds
  1. Pre-heat oven to 350 degrees. Generously coat an 8x8-inch baking dish with cooking spray.
  2. In a large bowl, combine egg, yogurt, vanilla, sugar and applesauce until well mixed.
  3. Add both flours, baking powder and baking soda, stirring until completely mixed. The batter will be sticky.
  4. Evenly spoon batter into prepared baking dish.
  5. Arrange peach slices on top of batter.
  6. In a small bowl combine 2 tablespoons flour, 2 tablespoons brown sugar and 1/2 teaspoon cinnamon.
  7. Using two forks (or your clean fingers), work the butter into the flour mixture until crumbly.
  8. Add the almonds to the butter/cinnamon mixture.
  9. Sprinkle topping over peaches.
  10. Bake for 1 hour (or until done).
  11. Slice into 9 equal pieces and remove from pan.
