Peach Coffee Cake
A coffee cake that makes a nice breakfast treat, snack or dessert.
1 egg, slightly beaten
1/2 cup non-fat plain Greek yogurt 1/2 teaspoon vanilla 1/3 cup sugar 1/4 cup unsweetened applesauce 1/2 cup wheat flour 1/2 cup all-purpose flour |
3/4 teaspoon baking powder
1/4 teaspoon baking soda 2 cups peeled and sliced peaches 2 tablespoons flour 2 tablespoons brown sugar 1/2 teaspoon cinnamon 1 tablespoon cold butter 1/4 cup chopped almonds |
- Pre-heat oven to 350 degrees. Generously coat an 8x8-inch baking dish with cooking spray.
- In a large bowl, combine egg, yogurt, vanilla, sugar and applesauce until well mixed.
- Add both flours, baking powder and baking soda, stirring until completely mixed. The batter will be sticky.
- Evenly spoon batter into prepared baking dish.
- Arrange peach slices on top of batter.
- In a small bowl combine 2 tablespoons flour, 2 tablespoons brown sugar and 1/2 teaspoon cinnamon.
- Using two forks (or your clean fingers), work the butter into the flour mixture until crumbly.
- Add the almonds to the butter/cinnamon mixture.
- Sprinkle topping over peaches.
- Bake for 1 hour (or until done).
- Slice into 9 equal pieces and remove from pan.
