Peanut Butter Banana Bread
I still love eating my favorite childhood sandwich peanut butter and banana on whole wheat bread. It also makes a fabulous breakfast or snack bread. I hope you enjoy this as much as we do.
Ingredients:
1/2 cup peanut butter no sugar or oil added (crunchy or creamy)
1/2 agave nectar or maple syrup
2 tablespoons flax meal + 6 tablespoons water (Let sit 5 minutes)
3 mashed bananas (about 1 cup)
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup warm water

1 teaspoon baking soda
1/2 teaspoon salt

Directions:
- Pre-heat oven to 325 degrees. Coat 9x5-inch loaf pan with cooking spray.
- In medium bowl, beat peanut butter and agave with hand held mixer.
- Add flax meal mixture, stirring well.
- In separate bowl, add flour baking soda and salt mix well.
- Stir 1/2 the flour into the peanut butter mixture. Then add 1/2 the water, mix well. Repeat with the remaining flour and water.
- Stir bananas into mixture.
- Pour batter into prepared pan and bake for 1 hour and 10 minutes or until done.
