Peek Holes

Peek Holes
Toast and eggs all in one, this is a fun way to eat eggs. Make sure to serve the center cut out along circle of bread with the Peek Hole so you can scoop up all the tasty yolk. This has been a family favorite for my husband since he was a young child. Peek Holes are also known as One Eyed Jacks.

4 slices bread
4 eggs
2 tablespoons butter
  1. Using a knife or cookie cutter, cut a hole in the middle of each slice of bread. Set the bread slices and the center piece aside.
  2. Heat a large heavy skillet over medium heat. When skillet is hot, melt the butter.
  3. Place each piece of bread in the skillet to coat them with butter and turn them over. 
  4. Crack an egg and pour it in the center of each slice of bread. 
  5. Place the center cut outs around the outside edge of the skillet.
  6. Cook the eggs for 1 to 1-1/2 minutes 9or until whites are cooked). Carefully flip them over and cook until desired doneness.
  7. Make sure you flip the center cut outs pieces of bread when you flip the eggs.
  8. Serve the Peek Holes along with the center cut out piece of bread.
