Penne with Bell Pepper

Penne with Bell Pepper
This simple aromatic pasta makes a great side dish or bring it to work to eat for lunch.
8 ounces penne pasta
1 bell pepper (preferably red or yellow) 2 tablespoons olive oil |
2-3 cloves garlic, minced
1 tablespoon parsley 1/4 cup shredded Romano cheese (or Parmesan) |
- Cook pasta according to package directions.
- Remove seeds and membranes from bell pepper. Cut into same size pieces as pasta.
- Heat oil in skillet, saute garlic until tender.
- Add bell pepper to garlic, cover, and cook over medium low for about 10 minutes.
- Drain pasta, add pasta and parsley to bell peppers stirring well.
- Top with cheese.
