Penne with Bell Pepper

Penne with Bell Pepper
This simple aromatic pasta makes a great side dish or bring it to work to eat for lunch.

8 ounces penne pasta
1 bell pepper (preferably red or yellow)
2 tablespoons olive oil
2-3 cloves garlic, minced
1 tablespoon parsley
1/4 cup shredded Romano cheese (or Parmesan)
    1. Cook pasta according to package directions.
    2. Remove seeds and membranes from bell pepper. Cut into same size pieces as pasta.
    3. Heat oil in skillet, saute garlic until tender.
    4. Add bell pepper to garlic, cover, and cook over medium low for about 10 minutes.
    5. Drain pasta, add pasta and parsley to bell peppers stirring well.
    6. Top with cheese.
