Poached Herb Cod
Poached Herb Cod is a quick and light entree, perfect for a light dinner.
1 pound cod fillets
1/4 cup chopped onion 1 clove minced garlic |
1-1/2 teaspoon chopped thyme
1 teaspoon chopped flat leaf parsley bay leaf |
- Place fish in large, deep skillet.
- Sprinkle all other ingredients around fish.
- Pour enough water in pan to cover fish.
- Bring water to just below boiling, reduce heat and simmer.
- Cook the fish for about 7-9 minutes, depending on thickness of fish.
- Remove fish with a slotted spoon and drain on paper towel before serving.
