Poached Herb Cod
Poached Herb Cod is a quick and light entree, perfect for a light dinner. 

1 pound cod fillets
1/4 cup chopped onion
1 clove minced garlic

1-1/2 teaspoon chopped thyme
1 teaspoon chopped flat leaf parsley
bay leaf
  1. Place fish in large, deep skillet.
  2. Sprinkle all other ingredients around fish.
  3. Pour enough water in pan to cover fish. 
  4. Bring water to just below boiling, reduce heat and simmer. 
  5. Cook the fish for about 7-9 minutes, depending on thickness of fish.
  6. Remove fish with a slotted spoon and drain on paper towel before serving.
