Pork, Rice and Broccoli Dinner

Pork, Rice and Broccoli Dinner
Here is a fast and easy all in one dinner that is not a casserole. Just marinate the pork chops in the morning to save time and add flavor.

4 boneless pork loin chops
1 tablespoon soy sauce
1 teaspoon sesame seed oil
1/2 teaspoon grated ginger(or minced)
1 clove garlic, minced
1 green onion, chopped
1 cup rice (if using brown rice adjust the cooking time)
3 cloves garlic, minced
2-1/2 cups low sodium chicken broth
1/2 cup wine
1 small head broccoli, cut into bite size pieces
1 small onion, chopped
1 tablespoon chopped cilantro
1/4 teaspoon red pepper flakes

  1. In a small bowl, combine soy sauce, sesame seed oil, ginger and 1 clove garlic. 
  2. Place pork chops in a shallow dish, pour marinade over pork chops, cover and refrigerate for at least 2 hours. (You can marinate the pork overnight if you want.)
  3. Remove pork from marinade. In a large skillet over medium heat, brown pork chops on both sides. Set aside.
  4. Add the rice and 3 cloves garlic to the skillet, stirring for about 2 minutes.
  5. Add the rest of the ingredients to the skillet, bring to boil, reduce heat, add pork chops and cover.
  6. Cook 30-35 minutes or until liquid is absorbed and pork is done.
