Pork with Leek Sauce

Pork with Leek Sauce
Roasting leeks and garlic make a rich quality sauce. Slowly roasting the pork loin chops keeps them moist and tender. Together these Pork Loin Chops with Leek Sauce are divine. 

4 boneless pork loin chops
6-8 cloves garlic
2 cups chopped leeks
1 teaspoon fennel seed
3/4 cup low-sodium chicken broth
1/4 cup white wine
1 teaspoon cornstarch
1 teaspoon water
  1. Pre-heat oven to 350 degrees.
  2. Place pork loin chops and whole garlic cloves in baking dish. Top with leeks and fennel seed.
  3. Cover baking dish and bake for 1 hour.
  4. When pork is done (no longer pink), remove from the oven.
  5. Allow the pork to sit in the baking dish covered. Place the juice and the leeks in a large heated skillet. 
  6. Squeeze the garlic from the garlic skins into the leeks.
  7. Stir well, mashing the garlic while stirring.
  8. Add the chicken broth and wine to the leeks, bringing to a boil.
  9. Reduce heat and simmer about 10 minutes, or until liquid has been reduced to half.
  10. Add cornstarch and water to thicken sauce. Serve over pork chops.
