Pulled Jackfruit Sandwiches
These are perfect for fall football season. Just put all the ingredients in the slow cooker and enjoy your flavorful, warm sandwiches for dinner or half time.
Ingredients:
2- 20 ounce cans green jackfruit, drained and rinsed
1/2 cup low-sodium ketchup
1/2 cup minced onion
1/2 tablespoon minced garlic
2 tablespoons brown sugar
2 tablespoons agave
2 tablespoons spicy mustard
2 tablespoons water
2 tablespoons vegan Worcestershire sauce
1 tablespoon balsamic vinegar
1/2 teaspoon crushed red pepper
2- 20 ounce cans green jackfruit, drained and rinsed
1/2 cup low-sodium ketchup
1/2 cup minced onion
1/2 tablespoon minced garlic

Directions:
- Place jackfruit pieces in bottom of slow cooker.
- In a small bowl, mix the rest of the ingredients (except the buns).
- Blend if you want a smooth sauce.
- Pour barbecue sauce over chicken.
- Cook on low 6-8 hours or on high for 3-4 hours.
- Remove the jackfruit from the slow cooker and shred.
- Return the jackfruit back to the slow cooker, mixing it with the sauce.
- Serve the jackfruit and barbecue sauce on hot rolls.
