Rice and Broccoli Dinner
You can add northern white beans to this flavorful rice and broccoli casserole to give it some extra protein.
1 tablespoon soy sauce
1 teaspoon sesame seed oil 1/2 teaspoon grated ginger(or minced) 3 cloves garlic, minced 1 green onion, chopped |
1 cup rice (if using brown rice adjust the cooking time)
2-1/2 cups low sodium vegetable broth 1/2 cup white wine 1 small head broccoli, cut into bite size pieces 1 small onion, chopped 1 tablespoon chopped cilantro 1/4 teaspoon red pepper flakes |
- In a large skillet with cover combine soy sauce, sesame seed oil, ginger and 1 clove garlic.
- Add the rice and 3 cloves garlic to the skillet, stirring for about 2 minutes.
- Add the rest of the ingredients to the skillet, bring to boil, reduce heat and cover.
- Cook 30-35 minutes or until liquid is absorbed and rice is cooked.
